i'm gonna start a recipe thread. why? because up here in canuckistan, the food sucks. yes, you can eat well if you go to nice restaurants, but most people buy (and presumably eat) canned food and microwave dinners. i might be guilty of doing that as well, but i hate it.

so here are some easy and cheap recipes that won't take long so you can eat like a human being every now and then. i hope some of you will contribute (without sarcasm/trying-to-be-funny pussyburger jokes).

1.) frikadellen.

frikadellen are a german version of... well, meatballs, really. except they're bigger.

what you need:
500 grams of meat (beef, or beef and porc mixed)
2 eggs
a small onion
breadcrumbs (or day-old toast if you have no crumbs)
dijon mustard (aka "real" mustard)
butter

put the meat in a bowl, and add the eggs, breadcrumbs, the onion (sliced as small as possible, please), two tablespoons of butter, and a tablespoon of dijon. add salt and pepper if you want to. some people also add chives (chopped, evidently).
mix with your hands until you get a sort of dough.

pre-heat a frying pan on your stove's "high" setting. put some butter in it.

while the pan is heating up, form the dough into fat patties. this is simple: take a chunk into your left hand, and start rolling it with your right. once you have formed a ball, flatten it in your hand. the pattie should be about as big as the surface of your hand, and about an inch/inch and a half thick.

place patties in pan. wait at least 5-7 minutes before turning them over. they're done when they have a dark brown colour on both sides.

this is usually served with pan fried potatoes (use the same pan after you cooked the meat, that way the meat juices and butter will make the potatoes tastier), but fries or rice will also do.

they are never served on a bun, just 'as-is' with maybe more mustard or ketchup.

when we have left overs we eat them cold on the next day, but reheating (microwave or pan) is also an option.

this should take no more than 25 minutes from start to finish to make.

Best Damn Fettuccine Alfredo - That's right, homemade sauce. We're not using store bought crap!
Ingredients
- 1/2 cup sweet butter
- 2 garlic cloves, minced
- 2 cups heavy cream
- 1/4 teaspoon white pepper
- 1/2 cup grated parmesan cheese (you can use shredded, but it takes longer to amalgamate with the rest of the sauce)
- 3/4 cup mozzarella cheese
- 1 lb. fettuccine


1. Melt the butter in a medium saucepan over medium/low heat.
2. Next, add the garlic, cream, white pepper and bring mixture to a simmer.
3. Stir often (very important). Then add the Parmesan cheese. Simmer the sauce for 8-10 minutes or until sauce has thickened and is smooth in consistency.
4. When sauce has thickened, add the Mozzarella cheese and stir until smooth again. Not to beat a dead horse or anything, but stir frequently.
5. At some point during step 3, start the fettuccine. Don't forget to add about 1 oz. of salt to the water. The pasta needs to cook for no more than ten minutes if you want it al dente - I don't care what your box says to do. When it's finished, drain the water
6. Once the pasta and sauce are both ready, put the fettuccine on plates and cover it with sauce to your liking. Add some garlic bread and salad, and voila, you've a got an excellent meal fit for "Little Italy".

2.) triple decker sandwiches

these need:
3 slices of toasted bread (white or brown)
mayonnaise or butter or margarine (to spread on the bread)

toast the bread, put the mayo (or butter or margarine) on all three slices.

variant a:
put tomato slices and bacon strips on the first slice of bread. put the second slice on top. put lettuce and chicken or turkey breast on the second slice. put the third slice on top.
** get chicken or turkey breast at supermarket, boil in water (and a bit of salt) for 20 minutes, then slice it thinly after it has cooled down. you can keep it for up to two days in the fridge after it has been boiled. **

variant b:
same as variant a, but with cheese instead of bacon.

variant c:
same as variants a and b, but with cold cut sausage.

variant d:
place the lettuce and tomato on slice 1, put slice 2 on top.
fry the sliced chicken breast in a pan together with some garlic or herb butter. put cheese on slice 2, then put the hot chicken on the cheese. put slice 3 on top.

variant e:
buy some sliced smoked meat. heat it in a microwave (about 1 minute for 4 ounces/120grams). then put tomato and lettuce on slice1, and the smoked meat and a slice of swiss cheese on slice 2. add mustard to slice 3 if you like.

variant f:
same as variant e, but with a fried egg instead of the smoked meat.

the finished sandwich is then cut in 4 pieces. use a large meat knife to cut it into an X, from corner to corner. make quick, sure cuts. if you hesitate you will make a mess, if you are sure about what you are doing you won't.

turn the now triangular pieces on their back sides, and put sandwich picks or toothpicks through them.

you can put the picks in BEFORE cutting if you have difficulty. arrange them in a + pattern.

note: this is harder if you don't put mayo or butter or margarine on the toast, as these hold the ingredients and the bread together while you are cutting/before you put he picks in.

eat with fries, or just by itself.

good for parties, you only need to make 4 of these to get 16 pieces.

Ginger Snap, chocolate, and peanut butter cookie sandwiches

Here is a very simple cookie recipe:

-1 box Ginger Snaps
-about 10 large Hershey bars - the ones that have evenly spaced "sections" that
can easily break off
-1 container peanut butter

Take 1 Ginger Snap. Spread peanut butter onto snap. Place at least 2 pieces Hershey's chocolate on peanut butter. Spread other snap with peanut butter. Connect to other peanut butter covered snap to make sandwich.
Repeat process to make more sandwiches.
