Wisconsin fudge turtle cheesecake.
I once had it at a high-end family owned farm restaurant in Wisconsin. There was livestock on site out back on this sprawling ranch. I had a dry aged ribeye w/ potatoes au gratin for the entree, and when I decided to order that cheesecake, the host invited me to the kitchen to see how it was made.
They take the warm cheesecake and put it on a stick and put it in a blast chiller. After it's slightly frozen, they dip in warm carmel and roll it on a bed of pecans. After another hit in the blast chiller, it's dipped in that homemade Wisconsin fudge, and goes for one blast in the chiller. The fudge is cold and creates a thick shell for the soft, sweet turtle interior.
I've never had anything like it, and it's by far the best confectionary I've ever tasted. Orgasmic. Simply orgasmic.
