What exactly does the tossing of the dough do for a pizza crust ?

I do know that hand tossed pizzas are the best pies that I've ever had ! :yummie

The only thing that I can think of at the moment as to why pizza dough is spun and tossed is that the centrifugal forces spin the dough outward making it a desired size e.g. 8 '', 10'' etc.
The other thing is that the centrifugal forces also feather the dough e.g, thinner in the center and thicker toward the outside. :dunno: just a guess

if the person tossing it hasnt washed there hands it does alot to the pizza .

allkidden aside im not really sure but hand tossed pizza taste great hmmm maybe it all does have to do with how clean there hands are

I think it gets rid of the lumps in the dough. Smoother crust as well as entertain customers.

Tossing the dough does absolutly nothing as far as flavor goes. The fact that it's a freshly made dough does. Tossing does help stretch the dough evenly.

Most of it is for show, but there IS a reason that people toss pizza dough. Tossing the pizza dough, as opposed to rolling it out, does two things that effect the dough itself...

1) It keeps a decent amount of air in the dough, which adds to the chewy center once the dough is cooked. When you roll the pizza dough with a rolling pin, you push out all of the air, which makes for a flatter, crispier crust.

2) It's easier to make good looking circles. As the dough spins in the air, it evenly stretches itself into a circle. When you roll the pizza dough with a rolling pin, you can easily screw up a circle.

I'm actually making grilled pizzas for me and my parents tomorrow, but there's a ZERO percent change I'll be tossing my dough (that sounds sexual).

Well dunno but one time there was a free food samples give out around my area and there was this guy hand tossing some dough. What got my attention was his hairy forearms and how the pizza dough was sticking to his arms when he tossed it so I got grossed out and did not get a sample Pizza slice...yuk! hairy arms...

I had always thought it was to incorporate more air into the dough, which I believe gets the dough to the desired texture.

Besides the fact you get better circles, I think once somebody gets good at doing it tossing pizza dough is also faster than trying to roll it out.

Brings back memories of when I used to work at a pizza place. The place was kinda small so the dough would always hit the light or knock out the ceiling panels. Of course don't forget liberal application of the old "five second rule."

That place was always getting trashed. We shared the building with an ice cream shop and diner and once somebody spilled a ten gallon barrel of chocolate sauce. It was someone from the kitchen staff, so we just drew a giant dick in it and took pictures with the polaroid (which was only supposed to be used for kids birthdays) and made them clean it up.

ah, good times. I miss that place. best job I ever had, just goofed off with my friends and ate pizza all day.
